Our Red Door Summer Clover Club is a heavenly concoction of raspberries, lemon juice and dry vermouth, using egg whites to create a deliciously creamy top.
50ml Red Door Highland Gin with Summer Botanicals
10ml lemon juice
10ml dry vermouth
10ml sugar syrup
½ egg white
Add 3 or 4 raspberries and 10ml sugar syrup to the base of a cocktail shaker and muddle together. Add all other ingredients and dry shake (without ice) for 15 seconds. Add ice to the shaker and wet shake (with ice) for a further 15 seconds. Fine strain into a chilled coupe glass. Garnish with fresh raspberries and mint.
