Have you tried baking your own gingerbread with gin and lemon icing? Fen (@myhomestylelife on Instagram) created her Gin’gerbread recipe by combining the festive favourite with a splash of Red Door magic.
For the gingerbread:
75g unsalted butter
60g dark muscovado sugar
100g golden syrup
100g black treacle
1 tsp grated ginger
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1 teaspoon ground ginger
150g plain flour
1/2 teaspoon bicarbonate of soda, dissolved in warm water
For the icing:
25ml Red Door Gin
25ml lemon juice
In a pan melt the butter, treacle, syrup, sugar and spices.
Cool the mixture slightly.
Next mix in the eggs, milk and dissolved bicarbonate of soda.
Add your flour and mix till combined.
Grease and line a loaf tin and bake for 45mins.
Whilst your loaf is in the oven, make your icing. Combine the gin and lemon juice, and then keep adding icing sugar until thick.
